Chicken Pandan



This is one of my favorite chicken dish.... sedap ngan nasi minyak, nasi tomato or nasi putih.... makan macam tu pun sedap... one of my friend said.. rasa macam otak2 ayam.... hmmm otak2 ayam.. macam mana tu.. tak pernah rasa tu... nanti boleh create resepi baru... otak2 ayam inspired from ayam pandan....

Ingredients :

chicken meat (breast or thight only) cut to 1 inch X 1 inch

Pandan leaves (untuk membungkus)

bamboo stick (pencukil gigi) - untuk seal ayam yang dibungkus dgn daun pandan

oil for frying

To blend:

2 tblsp chili powder

6 inch tumeric

3 inch ginger

6 inch galangal

10 colves of garlic

8 stalk of lemongrass

1 tblspn brown sugar

salt to taste (about generously 2 tspn)

a little of water for blending

Method:

1. blend the the ingredients finely.

2. mix the blend ingredients with chicken. marinate at least 2 hours or overnight in refrigerator

3. wrap the chicken meat with pandan leaves tightly, and seal with bamboo sticks.

4. deep fry the chicken until golden brown / cook enough. toss n serve
