Blacken beef rendang




Ingredients :

1 kg beef (any part that suitable for rendang) - cube
3 onion (large) – thinly slice *
4 cloves of garlic – finely chopped *
1 inch of ginger – finely chopped *
2 tbsp ground dried chili *
2 cinnamon sticks *
5 cardamon *
4 star anise *
3 tbsp kerisik (ground toasted coconut )
8 – 10 green chili – half and cut to 2 (deseed)
3 tbsp chili sauce
1 ½ tbsp tomato ketchup
1 ½ cups of sweet soy sauce
1 tbsp dark soy sauce
Cooking oil for sauteing
Brown sugar (if needed)
Salt to taste
Spring onion to garnish

Method :

1. Marinate beef with sweet soy sauce at least 3 hours max 6 hours. Refrigerated.
2. Sauté the all ingredients mark * with oil until fragrant over high heat.
3. Add beef and the leftover soy sauce marinate. Simmer over low heat until the meat tender. Add water if needed.
4. Add kerisik., Dark soy sauce, Chili sauce, tomato ketchup, salt n brown sugar (if needed). Mix well. Cook until the gravy thick.
5. Add green chili, lets cook for another 5 minutes. Turn heat off.
6. Garnish with spring onion and serve hot.

Notes : can add ½ cup of green peas if u like. Add this together with the green cili. I will bring out nicer taste.
